Level 3 Award in HACCP in Catering

The law requires all food businesses put in place "food safety management procedures". These procedures should be based on the recognised food safety system called HACCP (Hazard Analysis and Critical Control Points). These procedures are well proven in making all aspects of food production safe and are designed to ensure that food businesses can identify and deal with the hazards and risks involved in the production and handling of food. Additionally the law says that food safety management systems must now be:

  • Put in place permanently
  • Recorded and kept up to date
  • Reviewed as a result of any changes to prodicts and prcedures.

Regulation (EC) No 852/2004 requires that ‘those responsible for the development and maintenance of the HACCP system have received adequate training in the application of the HACCP principles’.

The Level 3 course has been developed for business owners, managers and supervisors of small and medium-sized catering and hospitality businesses.

The Level 3 Award in HACCP for Food Manufacturing is also available for managers and supervisors of food manufacturing businesses.

Codex principles of HACCP
Food safety managment tools

One day (6 hour) programme

Assessment is by written assignment.

Course requirements / notes:

It is recommended that candidates have an understanding of food hygiene and safety and ideally hold a current level 2 qualification (within the last 3 years).

Progression route is to the Level 3 Award in Food Safety or Level 4 Awards in Food Safety
